Ingredients

  • 10–12 salmon fillets, 5–6 oz each (about 4 lbs total)
  • 2 lemons, zested and thinly sliced
  • 3 tbsp olive oil
  • 3 tbsp melted butter
  • 4 garlic cloves, minced
  • 2 tbsp fresh dill, chopped
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp Dijon mustard
  • 1 tsp dried thyme
  • 1½ tsp kosher salt
  • ½ tsp black pepper

Method

  1. Prepare the pan: preheat oven to 375°F. Line a 13×9 inch half-size food pan with parchment paper for easier cleanup and serving.
  2. Make the herb butter: whisk together olive oil, melted butter, garlic, lemon zest, dill, parsley, Dijon mustard, thyme, salt, and pepper.
  3. Arrange the salmon: place fillets skin-side down in the prepared pan. Spoon the herb mixture evenly over each fillet. Top each piece with thin lemon slices.
  4. Bake for 16–20 minutes, depending on thickness, until the salmon is just barely opaque in the center and flakes easily with a fork. Avoid overbaking — the salmon will continue cooking slightly while holding in the chafing dish.
  5. Serve: transfer the pan directly to the chafing rack. Garnish with fresh herbs and lemon wedges before serving.

Pull the salmon from the oven slightly underdone. Residual heat from the pan and chafing dish will finish the cooking gently and keep the fish moist throughout service.
